Step by step
Scrape off food
Scrape scraps off the board with a bench scraper or the back of a knife.
Wash with a little soap
Wet the board with warm water, add a little Cutting board soap and scrub both sides along the grain with a soft brush or sponge.
Rinse quickly
Rinse the board under warm running water. Don't leave it sitting in the sink.
Dry it on its edge
Wipe the board dry with a towel, then stand it on its edge so air reaches both sides until it is completely dry.

Why not ordinary dish soap
